Apples in the Orchard Recipe

We were delighted to welcome private chef and food stylist Nicola Richman to our Apples in the Orchard event in October. As well as Nicola’s usual recipe for our Kitchen Garden Series, she has also shared this delicious Apple and Cheddar Latkes recipe, as demonstrated at the event.

Apple and Cheddar Latkes

Makes 12-14


  • 1 large, sweet apple such as golden delicious, peeled, cored and halved
  • 2 granny smith apples, peeled, cored and halved
  • Juice of one lemon
  • ½ tsp salt
  • 2 tbsp plain flour
  • ½ tsp baking powder
  • ½ tsp black pepper
  • 1 egg
  • 75g mature cheddar, grated
  • Vegetable oil


Grate the apples into a medium bowl. Toss with the lemon juice and add the salt. Allow to stand for 5 minutes.

In a small bowl, mix together the flour, baking powder and pepper. In another small bowl, lightly beat the large egg and set aside.

Place the apples in the centre of a clean tea towel and squeeze out the excess juice. Put back in the bowl and add the flour mix and cheese. Add the beaten egg and mix until completely combined. Add a little extra salt to season.

Pour about 2cm of vegetable oil into a frying pan. Once the oil is hot, drop in a heaped tbsp of the apple mixture, flattening on the spoon just before. Cook the latkes on their one side for 1-2 minutes or until golden brown. Carefully flip and cook for another minute. Transfer to kitchen roll to drain, then keep warm in a preheated, very low oven. Repeat the process with the remaining apple mixture.

Serve with a dollop of crème fraiche, chopped chives, chutney and a sprinkling of black pepper.
